Founded in 1829 by Hennequin de Villermont, Paul Renaudin and Jacques Bollinger, with the house still run by members of the Bollinger family. The estate itself was really propelled forward by Madame Lilly Bollinger in the early 1900's whom purchased vineyards and toured the world promoting the brand. Lilly Bollinger also produced this famous Champagne quote : “I drink it when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it—unless I’m thirsty.”
Bollinger Vineyards
Bollinger has some 160 hectares of vines that produce 60% of it's supply (which is unusually high for Champagne producers) including several ungrafted, pre-phylloxera plots that are 100+ years old
Bollinger Winemaking
Of all of the more renowned Champagne houses, Bollinger has arguably the most quality focused winemaking approach, with fermentation completed exclusively in small oak barrels for the vintage wines, and a combination of oak and stainless steel for the non vintage. Bollinger also ages their wines for 3 years for the non vintage and 5yrs plus for vintage wines (though they are only required to age it for 15 months for NV and 3 years for vintage). The wines are given a quite low dosage of between 6-9 grams a litre for NV and 3-5 for R.D.
Bollinger Wine Types
The Bollinger range is a focused one, with just a few select wines that make up the range. This range is focused on the 'Special Cuvée' (the standard non vintage product) which makes up the bulk of the production. Then comes the vintage wines in 'Grand Année' (produced only in the top vintages) and from this the R.D. (which is essentially a Grand Année which spends longer on yeast lees and has a lower dosage). Next up is the very rare - and extremely expensive - Vieille Vignes Françaises, a blanc de noirs which comes off just half a hectare of vines. Finally, Bollinger also produce a rare still Pinot Noir called Coteaux Champenois La Côte aux Enfants.
