Clarendon Hills Wine Making and Philosophy
Clarendon Hills produce 19 separate single vineyard wines, all 100% varietal. Their philosophy is based on conveying purity and a unique sense of place to achieve the ultimate expression of vineyard and variety. Naturally, winemaking at Clarendon Hills begins and ends in the vineyard. They work with old, dry-grown vines, many of them pre-phylloxera bush vines and perform every step of the winemaking process by hand to exacting specifications. They are proudly hands on, old-school and low tech. Every decision is determined by sensory evaluation of the fruit and wine. Roman is guided by a refined palate, honed on many years of enjoying the great wines of the world. A former biochemist, he also brings a sound understanding of scientific principles to the table. Every year, Clarendon Hills pushes their vines and wines a little further to reach the pinnacle of their capability.
