Clayfork Wines
We are fairly sure this wine has nothing to do with the singer but more the bracing palate, which in the industry some wine types might describe as ‘Steely.’ This is serious Sauvignon Blanc with all the bells and whistles thrown at it in the winery. It’s single vineyard, oak influenced and barrel fermented, vibrant with lemon zest, herbs and a touch of smoky complexity. The palate is taut with lime zest and citrus. This is all texture with tight acids, a slight sweetness and a really vibrant length of flavour. It’s Sauvignon Blanc Jim, but not as you know it.
