Hailing from the Catalonia region of Spain in the sub-region of Penedes 50 km south of Barcelona, Freixenet (pronounced fresh-eh-net) produces the Spanish sparkling wine Cava and is the largest producer in Spain. Its history can be traced back to 1861 when two winemaking families, the Ferrers and the Salas, joined together to form Freixenet. The business is still owned and operated by the Ferrer Salas family today with the fourth generation, Pedro Ferrer Salas, now in charge.
Wine Style
Winemaker Josep Bujan makes traditional Cava from a blend of three white, native Spanish varietals: Macebo (Viura), Xarel-lo and Parellada. The fruit is sourced from various vineyards in the Penedes region, and the wines are made using the traditional method, just like Champagne. Stylistically, Cava is dry and shows aromas of citrus, custard apple and toast. The palate generally displays a fine mousse and crisp acidity.
