Jasper Hill Winery
The Laughtons say ‘our aim is to make great wine with the preservation of nature’s flavours, complexities and balance’ – the wines are estate produced using organic and biodynamic principles. The grapes are handpicked and harvested at maximum flavour ripeness. All fermentation is carried out using wild yeast and pressings are returned to the ferment for additional character. New barrels (20 percent) are used for red wine fermentation and only coarse filtration is used to finish the wine.
