Poole’s Rock was established in 1988 by David Clarke, producing premium Hunter Valley wines. Expansion saw Poole’s Rock purchase a winery from Southcorp Wines in 2002, which brought the brand into the central village of Pokolbin.

Poole’s Rock has vineyards in the Hunter Valley of New South Wales, with primary vineyard sites in the Broke Fordwich sub-region and Pokolbin. The Cockfighter’s Ghost vineyard site is located at Wollombi Brook in Broke, but fruit is also sourced from additional select wine regions for this range.
