Sparkling Red Wines in All Wine Regions
This wine aims to emphasise fruit richness and softness. The nose features classic strawberries and cream with touches of rhubarb and bread. The wine enters the mouth with a swirl of delicious fruit. The strawberries also have light touches of cherry and yeasty complexity with a finish that is both soft and dry. This wine is perfect with trout mousse or salmon pate.
Now, this is a sparkling red right out of the box! it's a multi-vintage shiraz, cab sav and merlot blend that has old Australian fortifieds added to it. The outcome is a sumptuous, cuddly style of sparkling that shows dense black fruits and mocha on the nose, with just a whiff of savouriness. The palate is rich and fruit sweet with poised acidity, a slightly creamy mouthfeel, and a dry, bright finish. It's certainly a fuller-bodied style of sparkling red that would make a great cheese wine.
A dense, inky crimson wine of full body and rich fruit flavour. Re-fermented in the bottle in the traditional manner to yield a wonderful, velvety drinking experience.
Sparkling reds have had a bum wrap for a while, but this one is a game changer. It's deep and compact with some nice spicy plums and a lick of anise on the nose and palate, together with a smidgen of sweetness from the fruit, poised oak and a touch of creaminess, even. These wines go surprising well with Indian food.

How often do you get to try a really decent Sparkling red at a bargain price? We love this soft easy drinking bubbly that combines the best parts of Cabernet and Shiraz. On the nose is a concentrated fruit compote as well as some spicy aromatics. The Shiraz offers blackberry and pepper while the Cabernet lends structure and soft tannins. Made from Shiraz and Pinot Noir, this wine is named in honour of five generations of Scholz “doctors” that have worked and lived on the family property since 1845. The sixth generation broke the tradition to begin winemaking – but continued healing spirits with this sparkling red. After spending 18 months on yeast lees it was disgorged in October 2005. Lovely bright red hue and excellent medium bead, nicely persistent. The nose is quite light, showing some plum pudding characters and a touch of spice behind the red fruits. This is a very easy drink with lovely fresh fruit flavours and a very fine mousse, demonstrating good winemaking. This is a great drink at the price and shouldn’t be overlooked for its ability to match a wide array of foods from roast turkey to chocolate desserts.

Very complex, but nowhere near as phenolic or ripe as I had expected; serious sparkling red, with masses of spicy flavour and excellent balance. Base wine kept in old oak for 5 years (presumably Wendouree), re-fermented and dosed with fortified shiraz.

Based on four decades of museum stocks of Bobbie Burns Shiraz, decanted and blended as the base for this wine, then kept on tirage for at least 12 months prior to disgorgement. Very good colour given its provenance, and is neither sweet nor oaky, but complex and spicy. By any measure, a remarkable wine.
