Nose: Cassis, pencil shavings, dried herbs, graphite, plum pudding,
molasses, roasted malt and hints of earthy forest floor.
Palate: Firm tannins with touches of dark chocolate, fresh vanilla
beans, dark roasted coffee and soy. Has a long life ahead of it.
Food: Slow cooked lamb shoulder with cinnamon and bay leaf.
Chargrilled lamb cutlets with Dijon mustard. Rabbit and wild onion
casserole. Aged cheddar
