The extra lees ageing is the key to this being tasty, giving an extra layer of texture and weight that is very welcome. Like a Sauvignon Blanc that was looking a bit bony and has now had a good meal. It works a treat here too, the wine looking more flavoursome and tastier than many others of its ilk. Still a fruit driven wine, though a seriously good one at that.

Winemaker's Note
The fruit was picked at optimal ripeness and transferred to our winery. The fruit was destalked and pressed for a cool fermentation . The wine was given some extended lees contact prior to filtration and bottling.

The freshness and acidity of the wine lends itself to seafood and summer salads. Serve well chilled. The wine is best consumed in its youth.
