Tasting notes

Colour: Black-purple crimson

Nose: So super fine and only offering a very wisp of what will develop over the years. The striking mineral/crushed rock complexity offers unique balance to the otherwise deeply brooding roast meat perfume with notes of forest floor and asian spices. Flickers of boysenberry are also seen deep within. Hedonsitic.

Palate: Amazingly long and speckled with contrasting elements. The soft palate gives way to long and finely boned velvet, chalky tannins. The intensity remains and lingers in what becomes an intellectual pursuit of which way will it go. Youthful intensity is balanced by a small aperture of exposure and an extremely elegant delivery of concentration gives rise to impressions classic understatement and restraint.

Winemaking notes:

Region: Blewitt Springs, McLaren Vale: 10 kms N/E of McLaren Vale, South Australia

Winemaking: Low yielding, dry grown, pre-phylloxera vines planted in 1920 are grown in loamy, clay soils. Hand picking took place over several passes to ensure optimal ripeness of the fruit. Partial whole berry and whole bunch, wild yeast fermentation. Open vat primary with varied maceration periods. All pressings returned to the barrel.

Maturation: 18 months. 100% brand new, tight-grained French oak. Barrels are finally hand selected by winemaking team. Bottled onsite without fining or filtration.

A great classic, the inky/purple-colored 2005 Syrah Astralis is a 40-50 year effort. Although closed, it displays gorgeous but subtle notes of smoked meats, black currants, graphite, new saddle leather, truffles, and blackberries. Remarkably elegant for a wine of such power and intensity, this complex, rich, full-bodied, backward Syrah has totally absorbed its aging in 100% French oak, and appears set for a long life. If you plan on drinking it over the next 4-5 years, it will need 24 hours of decanting. It should be at its finest between 2012-2035.

Dark and peppery, black and spicy, this deeply flavoured, assertive and brooding young shiraz marries lashings of toasty, bacony new oak with layers of blackcurrant, dark plum and blackberry flavour. Coated with very firm but finely polished tannin, it’s sumptuous and concentrated, delivering its thick, juicy dark and marginally raisined fruit over faint suggestions of mint and menthol.
