Semillon is at its best when it gets over 5 years old, and this one from De Iuliis is right in the zone. This Semillon has a fair bit of zippy lemon and lime citrus on the nose and palate, along with some highly appealing toasty mature characters. The palate is lighter-bodied, with some honey flavours enriching the palate, poised acidity, and a long, juicy citrus and toast finish. Poached salmon or a seafood risotto would be the bomb with this.

Winemaker's Notes

The Hunter Valley is renowned for its unique style of aged Semillon. Made in the traditional Hunter method, this aged Semillon displays subtle hints of toast and honey coupled with fresh lemon and lime characters.

Appearance: Pale yellow.

Aroma: The wine still displays some fresh citrus and lime characters; but is beginning to show more subtle developed qualities of honey and toast.

Palate: Starting to display some of the complexities of an aged Semillon; nice citrus characters, combine with some toast and honey, to come through on the palate. Excellent acidity, which is in balance, adds to good length of flavour.

Cellaring: Drinking well now and will continue to improve over the coming years.

Notes: Fresh and lively in its youth, this excellent 2011 vintage Semillon has developed beeswax and honey characters with age in the bottle. An incredibly complex wine with a fresh citrus palate. Only 250 dozen have been carefully cellared in a temperature controlled environment. I hope you enjoy this wine as much as we do.
