Cork Cutters sees a coming together of three 'young gun' wine producers - Spinifex, Lucy Margaux and Some Young Punks! From an excellent South Australian year, this is a fulsome style of Cab Sav (with a cheeky 9% of Petit Verdot) that shows blackcurrant, tobacco leaves, violets and plums on the nose, with just a hint of savouriness. The palate kicks in with ripe dark fruit flavours, a mild grip to the tannins, and a balanced, savoury-edged finish. It's a tad more intriguing than the usual fare, and would be great with some slow-braised oxtail.
91% Cabernet Sauvignon and 9% Petit Verdot. Contemporary winemaking techniques are used with temperature controlled fermentation. The wine is tank pressed and spends 6 days on the skins, before being transferred barrel for 14 months of old oak maturation.
