Winemaker's Notes

This limited release Cabernet Sauvignon shows off the great Cabernet fruits produced in the Frankland River region.

Wine Style: Full-bodied red wine.

Appearance: Crimson.

Nose: Dense aroma of blackberry and mulberry with hints of bay leaf.

Palate: Sweet back palate, crammed with juicy blackberry and dense plum with an earthy complexity, toasty oak and a long satisfying finish.

Cellaring: Will benefit from careful cellaring for up to 8 years.

Serving Suggestions: Serve at room temperature (18°C) with rare roast beef.

Vinification: Cabernet Sauvignon was harvested in the early morning, and crushed to closed red fermenters. At this point the fruit is cold soaked, then inoculated for ferment before post-ferment maceration. The wine was then drained into new and one year old French oak for 18 months maturation.

Alc/vol: 14.0%

Such an attractive style of wine. Feels fluid and well-fruited without ever feeling taxing or overworked. Currants, eucalypt leaves, milk chocolate and leather. It hits, it flows, it satisfies.
