Here's another fresh, bright, creamy-textured offering from Mojo that would be great with poultry dishes. It's an unoaked chardy that shows apples, pears and tropical fruits on the nose, which translate to the flavours on the lighter-bodied palate. It's all supported by citrusy acidity, a creamy mouthfeel, and a decent, lip-smacking finish.
Mojo Chardonnay has a lively, solid palate and a style that is very much appropriate to the Mojo range and drink now ideal. The fruit was sourced from the higher altitudes and further reaches of Adelaide Hills in order to ensure consistent full flavour as well as mouth watering, crisp acidity. Our usual cautious approach was taken in monitoring the vineyards, waiting until those endearing tropical flavours appeared in the fruit prior to harvesting. The juice was inoculated with yeast that enhances the aromatics of the wine and ferments were run very cool to retain valuable volatiles. A small portion was fermented in oak to enhance depth and richness. Four months of lees stirring was undertaken post fermentation in order to compliment the mid palate texture and also give a slight nutty complexity.
Machine harvested during the cool of the night mid February 2013. Cold and slow fermentation with aromatic yeast to retain freshness in stainless steel. Lees stirred for 4 months. Bottled under screw cap to retain freshness.
A melange of tropical and melon fruit enriched by a hint of honey and a whiff of toast.
Lively medium bodied palate graced with upfront nectarine and honeydew melon complimented by attractive traces of guava, butterscotch and cashew. The mid palate is textural with a mealy complexity derived from lees stirring along with a subtle richness and depth derived from discreet oak handling. The balanced, finger lime acidity compliments the palate and provides support throughout presenting a crisp, dry zesty finish.
Lightly chilled is perfect for the slightly sweet meat of prawns, scampi or yabbies. Alternatively will compliment most chicken dishes or a delight with crab cakes.
