The cool climate in Victoria was originally chosen as a place for the production of top quality sparkling wine and the vision paid off. The fruit is picked in the dark ensuring optimum conditions for the grapes. The result is a wine of complexity and detail with a tantalising bead, hints of yeast as well as roasted nuts and citrus. The yeast and citrus theme continues on the palate as clean acids ensure a dry finish.
Appearance: Brilliant green straw with a fine bead of gentle bubbles.
Nose: The aroma is delicate and complex with the yeast autolysis character of freshly baked bread complimented by citrus fruits and hazelnuts.
Palate: Toasty baked yeast notes prevail over the bright grapefruit flavoured palate. A subtle lemon meringue confectionery note also appears before a fine acid backbone and refreshing effervescence cleanses the dry finish.
