Cracka Review

This seminal wine from Paringa Estate is only made when vintage conditions deem it possible, which means only the very best fruit makes the grade. This has Mornington cool climate characters oozing out of every pore, with trademark cracked pepper characters as well as plum and vital spice. The palate is elegance personified with soft tannins providing structure and excellent length. The wine will soften further with careful cellaring and would pair well with roasted meats, game and even mild meat curries.

Winemaker's Notes

The Paringa: The name “The Paringa” denotes the single vineyard origin of the Shiraz grown on Paringa Road, Red Hill South. Planting of this marginal Mornington Peninsula variety commenced in 1985. From this site fruit of distinction is born from a combination of red volcanic (Ferrasol) soil, a north facing aspect and altitude of 146m. In creating this wine viticulture and winemaking practices are approached with the intent of preserving a pure expression of site from soil through to bottle.

Vintage: Warm and dry conditions through flowering ensured good berry set. Average temperatures during February / March provided long and even ripening and allowed for fruit to be picked at optimal maturity.

Winemaking: Handpicked fruit was de-stemmed and cold soaked for 4 days before yeast inoculation. The wine spent a total of 21 days on skins in open top foudres gentle hand plunging. Post fermentation the wine was matured in French oak barrels for 18 months (50% new).

Tasting Notes: The bouquet has Paringa’s distinctive savoury plum & cracked black pepper/spice characters. The palate has rich, spicy plum, blackberry & liquorice characters combined with fine grained tannins that provide excellent structure, texture & length to the wine.

Matured for 18 months in French barriques (25% new). The medium to full-bodied palate is led by blackberry, plum, licorice and spice flavours that are rounded up by tannins disinterested in hearing any discussion about their powerful grip. A wine that absolutely demands patience, but will repay it.

Rich fruit, oak, spice and tannin. Well integrated. Has a bit of presence. Wave of flavour builds slowly before crashing through the finish. A meaty Shiraz. Toast and earth characters too. Dry finish, almost too dry.
