2013 Paulett Wines Late Harvest Riesling

Being a late harvest wine, this is a sweeter style of Riesling in the medium-sweet spectrum, so you could have this as a starter or with a fruity dessert. Smells of limes and candied apples rise from the glass, along with hints of sweet spices and tropicals. The palate is plush and sweet, with a nice zip of balancing citrusy acidity and some crunchiness to the decent finish. One for the sweet-toothed!

Winemaker's Notes

The grapes are left on the vine for two weeks longer than our dry style to achieve slightly higher sugar levels and slightly different flavour profile.

Cold settled juice is fermented evenly to about 28 grams residual sugar at which point we stop the fermentation to retain these natural grape sugars.

A wine that we describe as our sweet & dry that shows lovely Riesling flavours with great acid balance and sweetness. The palate is long and even with a crisp clean finish showing no sign of cloyishness.

A fine, stylish, cellaring riesling whose delicate, faintly tropical perfume of lemon rind, lime juice and white flowers is backed by a faint chalkiness. It's long and elegant, with a supple and intensely flavoured palate of bright citrusy flavour extending towards an austere, steely finish punctuated by a mineral hint of brine.
