An Austrian making wine in Australia? It's enough to confuse the bee jaysus out of you. However, Salomon have been in Oz for over a decade now, so they know the lay of the land. This is a full-blooded wine that shows lots of ripe dark cassis and chocolate on the nose, before the palate kicks in with rich, sweetly-fruited flavours, licks of mocha, sandy tannins, and a bright, juicy finish. It's got a few years in it yet, but why wait - cook up that lamb shoulder and get into it!

Winemaker's Notes

Australian richness combined with elegant cassis notes.

Deep red in colour, with an expressive aroma. Fine, concentrated blueberry and blackcurrant on the palate, with hints of dark chocolate. Well-structured and velvety, with fine tannins and a long, nuanced finish.

Over 90% Cabernet Sauvignon, remainder Merlot.

Hand-picked, destemmed, crushed, open-fermented, wild yeast, matured for 18 months in French oak (20% new). An interesting wine, the key to its individuality its 5-week maceration in skins, then being pressed direct to barrel. It finally comes out of oak and into bottle, bringing with it a fine stream of juicy dark fruits and fine-grained tannins.

Bright crimson-purple; a high-quality evocation of perfectly ripened cabernet, with resplendent cassis fruit on the medium-bodied palate, the tannins fine, the oak subtle. A badly stained, pock-marked cork.

Medium red-purple; a very well made Cabernet with excellent varietal expression, and similarly structured and balanced; the cassis fruit reflects perfect ripening in the vineyard, the tannins likewise. The '10 should be a great wine.
