Hand-picked, destemmed, crushed, open-fermented, wild yeast, matured for 18 months in French oak (20% new). An interesting wine, the key to its individuality its 5-week maceration in skins, then being pressed direct to barrel. It finally comes out of oak and into bottle, bringing with it a fine stream of juicy dark fruits and fine-grained tannins.Drink by 2043
