Les tongs means flip flops or thongs in French. This is a wine made for drinking by the beach, by the pool, on a verandah or around a table with friends and family. The French would call this a "vin de soif" - a wine to drink when you are thirsty i.e. a thirst quencher!
Grapes: Syrah (Shiraz), Cinsault.
Winemaking: Grapes are harvested at night to ensure the full aromatic content of the grapes is retained and to prevent oxidation. Cooler grapes also means the winemaker has better control of the first fermentation process. When the grapes arrive at the winery, they are cooled, crushed and pressed. The juice is then allowed to ferment at a low temperature, again to preserve the maximum amount of aromatics.
Tasting Notes: A fine pink colour. An aromatic pleasant nose with hints of strawberry and blackberry. Light, fruity and smooth in the mouth but a crisp and dry finish. Low in alcohol so avoiding the "bitterness" or "hotness" one can find in some entry level Rosé. Super!
Food Pairing: Drink on its own, enjoy with a pre-dinner platter or a seafood or white meats. Will stand up to some spicy dishes as well.
