What a rare find this is. The 2015 Cosmo Yarra Valley Chardonnay is a beauty. Made by former La Trobe University winemaker lecturer Lindsay Corby, it's a superb Yarra Chard that shows ultra clever winemaking skill. Think white peach fruit, subtle vanilla oak and then crisp acidity to finish. A modern Yarra white, but with flavour (we love flayva!).! Seriously clever Chardonnay is never this cheap, especially not glorious boutique wines like this Cosmo...
This blend of Estate and Yarra Valley grapes shows ripe apple and peach aromas and flavours complemented by the use of light toast French oak. Crispy skin Atlantic Salmon is a great match.
Appearance: Light-medium yellow straw, bright.
Aroma: Apples and peach with some secondary nutty/cashew aromas coming through (from the oak).
Palate: Spice and nuts from the oak carry the light fruit notes. Some tannins are evident from the oak, but these are balanced by the sweet fruit flavours and modest acid.
Viticulture: Estate; Dry grown, VSP trellis. Hand harvested.
Estate; pH 3.24, Baume 13.2 light toast French oak maturation.
Contract fruit; pH 3.30, Baume 13.3. Fermented in both seasoned French oak barrels and tank. Light and medium toast French oak.
Finishing - The wine was not fined with any animal products so is VEGAN FRIENDLY
