2015 Killerby Margaret River Chardonnay
Winemaking Notes: The juice was patiently drained and settled prior to fermentation in approximately two thirds new French oak, and the balance in one year old French oak. Partial wild fermentation and yeast lees stirring weekly promoted texture. The wine is bottled after 11 months maturation and will benefit from careful cellaring.
Colour: Light straw with a green tinge.
Nose: An intense expression of lemon barley, lime zest, fig and pink grapefruit.
Palate: A complex palate of fruit and intriguing secondary characters derived from part wild fermentation. Lime citrus, stonefruit, ginger, zesty lemon and a long pure finish.
Food Pairings: Crumbed veal cutlet with a seasonal garden salad.
