Winemaking:Fermented separately using a range of techniques; this creates an array of blending options and choices for the final wine. Between 12-15 months in a mix of French & American oak, impart softness and flavour.
Appearance:Deep dark red appearance.
Nose:Lashes of mulberry jam, a little light black pepper, and an light whack of American oak vanillin infiltration.
Palate:Tannins are quite tight, and show that this small but brave little fella still has a while to go yet. Will sit down for 5-7 years no worries whatsoever.
Food Match:BBQ and roast meats, pork ribs, hearty beef stews and casseroles, game meats & spicy poultry
