Colour: Deep crimson with a purple hue

Nose: Earthy complex characters combined with savoury cherries and dark plum aromas

Palate: The palate is dark and brooding. The savoury earthiness flows into plums and cherries. The palate has serious textural weight with a host of complex detail that is worth exploring

Food pairing: Perfect with gamey flavoursome foods like braised venison

Cellar potential: 6-8 years

Alc/vol: 14.5%

Hand-picked, destemmed and crushed to small open fermenters, cold-soaked, cultured yeast, pressed to French oak (50% new) for 9 months maturation. Very good purple-crimson hue; the cool climate of Denmark should always have produced quality pinot noir, perhaps young vines and limited winemaking experience were responsible. Whatever, this is a lovely pinot, full of cherry and plum fruit, spice and integrated oak. It is great now, and will be dispatched quick smart, but will be superb in a few years.
