    When we think Chablis, there are only a handful of producers that get us frothing with excitement and William Fevre stands tall as one of the masters of the region. Since 1959 the estate has been making this world famous style of unoaked Chardonnay. There’s a rich vein of citrus on the palate as well as the trademark minerality of the region. It’s detailed and intense with a strong citrus finish. A perfect example of Chablis that would pair with oysters.

    Lime, touch of oyster shell and brine, light floral notes. It’s lively and juicy, citrus and green apple, with a zing of acidity and some subtle waxy/creamy flavours, a smattering of dried herb, and a finish that closes dry and crunchy, with pretty fair length. Glass to glass. It’s great drinking.

    Petit-Chablis is not supposed to be this serious, this fine, this pure and this delicious. But if you are ever going to buy Petit Chablis, it should be from William Fevre. Pretty green melon, apple fruit, fresh and driven by some sterling acidity, with genuine concentration and length.

    Fevre Petit Chablis is as good as most producers straight Chablis. The 2006 shows distinct minerality, freshness and intensity of citrus and green melon fruit. Great drinking over the next couple of years.

    Description: Petit Chablis is a perfect introduction to the world of Chablis’ fine wines. Its Portlandian subsoil differs somewhat from other AOCs in the region. However, it still evokes Chablis characteristics with lovely freshness on the palate
