Cracka Review

The Native Goose on the label is not so much a food pairing suggestion with this wine (although it might work). No, each year a particular breed of geese migrate and land in the vineyards of Cape Barren in the McLaren Vale. It’s layered with citrus, peach and other stone fruit as well as notes of cashew and some fine, natural acids. This is a fine food wine that’s suited to seafood as well as poultry dishes.

Winemaker's Notes

Colour: Vibrant green and fresh attractiveness.

Aroma: Elegant pungent nose, with hints of grapefruit, pineapple, cashew and lime juice.

Palate: A very flavoursome palate of great intensity, drive and length. Immediate signs of grapefruit zest, are followed by white peach and cashew, held together with minerally acidity. The mouth-filling palate shows lemon curd creaminess from 30% of the wine having undergone Malolactic Fermentation. An excellently balanced wine with well-integrated high quality oak.

Varietals: 100% Chardonnay – Dijon Bernard Clones 76 and 95.

Region: Charleston, Adelaide Hills.

Process: After harvesting in the very cool early morning, the grapes were de-stemmed without crushing, direct into the press. Gentle pressing allowed extraction of the prime juice, whilst still maintaining the delicacy and elegance. Fermentation proceeded in stainless steel tank with about half of the solids retained until about the mid-point of sugar conversion, when the juice was then filled to French oak Hogsheads to complete fermentation. Lees stirring was performed weekly for 4 months, and 30% of the wine underwent Malolactic fermentation. The wine was matured in the same oak barrels for 6 months before filtration and bottling.

Cellaring: 3-5 years.

Alc/vol: 13.2%
