If there’s one thing that’s cool it’s Chardonnay and this white from Thorn-Clarke ticks all the right boxes. It’s made with fruit from the cool Eden Valley and it’s called Cool Woods, so it’s a cool all rounder. You’ll find aromas of peach as well as vivid tropical notes leading to a creamy, persistent finish. It’s a drink now prospect that goes well with an array of foods and would improve any chicken dish.
Cool Woods wines are made to be enjoyed with friends and family – the wines are sourced from our own cool climate vineyards, and supplemented with fruit from neighbouring cool climate regions.
Chardonnay is one of the most versatile and popular grape varietals grown throughout the world, and it is certainly a varietal that works well in our vineyard. The style we aim for is one that has received subtle oak maturation which compliments fruit character, and some yeast lees contact to add flavour and complexity.
A ‘mid weight’ wine, our Chardonnay can be paired well with food, or simply conversation and a few laughs.
Winemakers Note: The wine has a pale yellow colour. The wine has dominant peach aromas with a hint of pineapple juice on the nose. The palate has intense peach and pineapple characters. The mid palate is soft and creamy.
Vintage: A warm dry spring led to into similarly dry conditions in December and January. The warm weather brought harvest on in the first week of February. A couple of good rain events led to milder conditions slowed down the ripening and allowed the fruit to develop well. Whites from 2016 show good flavour and balance.
Winemaking: Crushed, de-stemmed and then pressed using a membrane press. The ferment was kept slow and cool to retain all the natural flavours and aromatic qualities. The juice was fermented in stainless steel tanks at a cool temperature to retain all the natural flavours and aromatic qualities. The wine was blended, clarified, filtered and then bottled soon afterwards so the wine was a true expression of the grape/terroir from which it was made.
