This Kakaba Reserve Sauvignon Blanc comes from Chris & Jill Milner in the Adelaide Hills and is the best Sauv they can produce. The top of the Kakaba Sauv tree, incorporating barrel maturation to make for a proper reserve wine. Fancy!
The Kakaba Reserve wines represent the pinnacle of our Adelaide Hills winemaking.
Small parcels of wine, made from the highest quality grapes, nurtured in the vineyard and then very carefully treated in the winery, with minimal winemaking intervention and sensible use of quality French oak.
Our aim is to make elegant wines which express the terroir of the vineyard and exhibit purity and vibrancy of fruit.
Winemaking: The grapes for this wine are sourced from three vineyards at Kenton Valley and Gumeracha in the northern part of the Adelaide Hills. The Kenton Valley vineyard has an easterly aspect and hence is the coolest of all sites. This was picked early to maximise the herbaceous, apple and cucumber notes in the wine. Whereas the other vineyards were picked at around 12 baumé exhibiting a good balance of natural citrus acidity and tropical flavours.
The grapes were machine picked in the cool of the night and delivered to the winery at dawn, where they were de-stemmed and crushed. The free-run and pressings were separated and fermented separately. The wine was stored on yeast lees for four months to add texture and then the best components were selected for the Kakaba Reserve blend, which was stabilised and clarified before bottling.
Tasting Notes: An elegant wine with intense aromatics and full fruit driven palate. Fresh tropical melon and crisp cucumber with hints of passionfruit, lychee and pawpaw. The wine has well-balanced acidity and great length of fruit.
