Winemaker's Notes

The Wine: Pale quartz in colour, the bouquet has lime and apple with chalky minerality. Flavours of lime and chalky minerality follow suit on the palate with spices and lime. The acidity is tight knit and long and the texture is soft.

Drink With: Grilled sardines with spiked citrus and chilli slaw.

Drink: 2016 - 2025.

Made from the best blocks of the Cherubino vineyard in Porongurup, this is a Riesling all about finesse, purity and Porongurup's regional stamp. The bouquet has a haunting touch of crushed sea shell, the palate rapidly building a stream of lime zest, green apple and a savoury touch on the banks of that stream. As with all top class Rieslings, acidity is the glue that binds.

Very pale, almost completely colourless appearance. The bouquet is very shy and restrained, but shows some malty savoury, possibly oxidative winemaking touches. It's not fragrantly floral or citrusy - as in a traditional, protectively-made Aussie Riesling. The finish is clean, soft and dry. Again, typically with this maker, the acidity is not lacking but is seamless and anything but shrill.

Bright straw-green; a picture-perfect riesling at the start of a long and prosperous life; the bouquet is as yet reticent, but the palate is ready to do business on Porongurup's terms. Citrus, pear and apple are the spearhead, crunchy acidity the defence at the rear. To be left for as long as you possibly can.

Quartz white; while the regional origin is the same as the Laissez-Faire, and the sense of place is thus obvious, this is a wine of exceptional intensity and length, effortlessly delivering its array of lime, mineral and lemon (in that order) on a perfectly balanced palate.

Pale quartz-green; if ever a Riesling was built for a very long future, this is it; ultra-careful selection of high-quality grapes means that CherubinoÍs role as a winemaker has been limited to ensuring the fermentation has left the wine bone dry, the magic coming from the fruit expression on the finish and the quite beautiful mouthfeel.
