Zilzie don’t rest on their laurels when it comes to the fruit they use in their regional selections. When they want to make a wine that is distinctly regional they head to the Yarra Valley to source the best fruit possible. This is a sophisticated Chardonnay that’s refined and elegant and seriously good with food like chicken. It tastes of nectarine and citrus with a creamy and persistent palate weight that finishes with attractive natural acids.
Colour: Youthful straw.
Aroma: Nectarine, white peach and citrus with a hint of oak.
Palate: An elegant fruit driven palate with refreshing minerality, toasty oak, and a delightful zest.
Winemaking: The fruit was selected from premium Yarra Valley vineyards, crushed and inoculated with a selected yeast strain prior to being transferred to French oak barriques for fermentation. The wine was battonaged ‘sur lie’ weekly to increase complexity and palate texture, before blending, stabilising and bottling.
Vintage: 2016 was an earlier than expected vintage in the Yarra Valley due to a dry summer and some refreshing unseasonal rain a couple of weeks prior to harvest. Lower yields together with the warm dry conditions during vintage provided an ideal environment for excellent flavour development, varietal characters and the retention of natural acidity in the fruit.
Pair with: Creamy chicken and pasta with a sprinkling of fresh parmesan.
Cellaring: Enjoy on release or within 3 years of vintage.
