This very stylish sparkling is a waipara, North Canterbury blend of Pinot Noir (80 per cent) and Chardonnay, barrel-fermented and matured on its yeast lees in the bottle for at least three years, before being disgorged on demand. The initial release from late 1999 is fresh and complex, with lovely delicacy and depth of intense, lemony, yeasty flavour, smooth and vivacious.

Medium yellow-green; a complex bouquet with some spice and also a touch of wet dog. The palate is quite well balanced, with bready/cakey notes and pronounced flavour persistence. Finishes with relatively high acidity.
