Long after the Amisfield harvest has finished, selected Sauvignon Blanc grapes are left on the vine to benefit from the full effects of botrytis infection. When the grapes finally reach the desired level of infection they're hand picked and barrel fermented in new French oak. The end result is spellbinding. Expect a floral, bright and spicy nose packed with smells of sweet apricot and passion fruit jam, while the palate strikes with serious intensity and follows quickly with a wave of sweet cloying fruit, fresh acidity and an intensely long, clean and balanced finish. Drink it with Gorgonzola dolce.
