Aravina Estate Cabernet Merlot

Winemaker's Notes

Appearance: Deep ruby red.

Nose: The wine exhibits ripe cassis and dark chocolate aromas. High notes of cedary oak and bay leaf add further complexity.

Palate: The palate unfolds in a myriad of layers of ripe blackcurrant and red fruit interwoven with savoury oak. The long and flavoursome finish is well supported by dry and fine grained tannins.

Cellaring: 3 - 5 years.

Alcohol: 14.7%

Winemaking: The Cabernet Sauvignon was picked on 19 March 2012 at a low rate of 4.4 T/Ha. The Merlot was picked on 29 March 2015 at 6.3 T/Ha. The individual batches of Cabernet Sauvignon and Merlot were crushed and subsequently fermented in a combination of upright static fermenters and open fermenters. Following malolactic fermentation, the wines were allowed to mature for 18 to 20 months in new and seasoned French oak barriques. Individual batches were assessed and blended before the wine was lightly fined, filtered and bottled.

Good hue and depth; streams of cassis, redcurrant and olivaceous flavours run through the medium-bodied palate, red fruits emerging on the top of the pile; the oak and tannins are balanced.
