This bright, off-dry style of Chenin is something different for those who like a kiss of sweetness in their wines. Smells of tropical fruit salad, citrus and apples leap out of the glass, whilst the palate is a bit more medium-bodied, with melon and lemon flavours, hits of sweetness, a slight talciness to the texture, and a bright, slightly sweet finish. This would be great with spicy Thai food, or some seared scallops.
The 2014 Chenin was harvested in the early hours of the morning
on March 4 2014. On arrival to the winery, the fruit was de-stemmed,
crushed and the must chilled en-route to the press. The juice was
settled for three days before being racked clear, warmed and
inoculated for fermentation.
The fermentation was held at 15°C in stainless steel tanks and was
stopped prior to the wine completing fermentation to retain natural
The wine was racked off yeast lees, fined and stabilised before being
filtered and bottled.
