Winemaker's Notes

Appearance: Deep plum red.

Nose: Ripe plum, red berry and warm spices from the oak.

Palate: Dry, forest fruit, plum and blackcurrant flavours. The tannins are soft and plush. The oak flavours are underlying but give the wine tremendous structure and complexity. A full bodied style with a rich and generous finish.

Cellaring: 5 - 10 years.

Alcohol: 14.5%

Winemaking: The 2012 Merlot was harvested on 23 March 2012 from the old block vineyard which was cropped at 2.5 tonnes per acre. Harvested in the cool of the early morning, the grapes were taken directly to the winery for processing. On delivery to the winery the fruit was crushed with the rollers set wide apart, which allowed some berries to remain whole. The must was then transferred to upright static fermenters and inoculated with yeast for primary fermentation. The fermenter was drained, pressed and inoculated for malo-lactic fermentation after 16 days of maceration on skins.

Following eighteen months maturing in French oak (20% new oak), the wine was blended, lightly fined and filtered prior to bottling.

Bright, deep, purple/red colour. The bouquet is dominated by high-quality cedary oak and blackcurrant fruit. There are some minty, crushed leaf, cabernet-like high notes. There seems to be some cabernet in this. An elegant, medium to full-bodied, brightly fruited wine with well-measured tannins which are ripe and not too firm. It’s on the cusp, though: you need to like firm Bordeaux styles, or else be prepared to cellar it a while (from 26-year-old-vines).
