Pale straw-green; The Apex is the title given to the best wine produced each vintage: here it is a chardonnay that is both very subtle yet very complex; it is hand-picked, whole bunch-pressed, the juice wild yeast-fermented in new French oak; that oak is part of the single stream of white peach, grapefruit and cashew flavours underpinned by citrussy acidity. The overall texture and balance are impeccable, so much so it's not easy to unbundle the wine.
