It’s interesting to note that Bollinger became the drink of choice for James Bond and has been mentioned in at least five of the Bond movies, but you don’t need to be a secret agent to appreciate this wonderful nectar. This extraordinary wine is only produced in exceptional vintages. It’s vividly nutty with a nuanced nose of citrus and baked biscuits. A seamlessly integrated palate, with notes of straw, a focused citrus core before a soft, creamy mouthfeel and a taut, acid finish.

Bollinger’s prestige champagne is produced only when the harvest reaches a perfect balance: it is Bollinger’s version of an exceptional vintage.

To the eye: Its delicate blush and old gold colours are a sign of maturity and of Bollinger’s winemaking skills.

To the nose: Its aromas are a testimony to the barrels it aged in: toasted bread and brandied fruit. Notes of exotic spices, rhubarb and stone fruit.

To the palate: Powerful yet soft bubbles. Remarkable structure and length.

Pairings: Foie gras, fresh or pan-fried. Grilled fish, with or without sauce, lobster. Roast lamb or veal. Parmesan or Comté.

The Bollinger house style is in full effect here; edgy and complex yeasty characters, sweet and sour citrus fruits, freshly rolled bread dough, really fresh. The palate is a ball of intense fruit supplemented with woody spices, finishing with taut fresh acidity; this will age handsomely.

It always amazes me how in vintages that are not rated highly how Bollinger never fails to impress. This is another supreme vintage Bollinger; very different to the quite dense and rich 1997, the 1999 is all about pristine fruit character. Finely structured but with incredibly focussed fruit, the finish just goes on and on. While beautiful to drink now it will achieve greater heights as it flowers over the next decade
