Is Cabernet king? Well, it’s certainly a noble grape but it’s been de-throne by Shiraz in recent years. Margaret River Cabernet is some of the most lauded in the world and this fine wine from Capel Vale shows how choosing the right site can improve your chances of making great wines. Matured in French oak this is classic Margaret River Cabernet rich in aromas of cassis, cedar, capsicum, plum as well as chocolate and cedar. It’s elegant and long and would pair well with mature hard cheeses.

Winemaker's Notes

This full bodied and elegant wine is a blend of predominantly Cabernet Sauvignon enhanced with a small percentage of classic varietals. Following fermentation and extended maceration, the wine has been matured in new and old French oak barriques, producing a complex blend of Margaret River fruit characters including cassis, eucalypt, capsicum, mulberry and plum with secondary notes of chocolate, tobacco and cedar.


Nose: Mulberry, cassis and capsicum overtones.

Palate: Mulberries, cassis and plum with some secondary chocolate tones or a hearty beef casserole, beef stroganoff, or dukkah-crusted lamb cutlets.

Food: Mature hard cheeses such as cheddar, parmesan or romano.

Cellaring: Enjoy now or cellar in the mid-term.
