Pushes the envelope to extremes, with wild fermentation, partial mlf, and ageing on yeast lees for nine months. The aim was to produce complexity and texture, rather than youthful fruit and zesty acidity, and winemaker Tony Cosgriff has succeeded admirably. The wine has uncommon texture without, however, the loss of varietal fruit, retaining flavours of gooseberry and ripe citrus, finishing with cleansing acidity.
