This is exactly what quaffing is all about! Bill and Stephen Chambers make some of the country's finest fortifieds - including arguably its finest, the sublime Chambers Rare Muscadelle ($250) with a tiny portion going back to the nineteenth century. Like the great muscats and tokays (muscadelles) of Rutherglen, it is deeply flavoured, profound and opulent beyond belief. At the other end of the scale is this blisteringly good everyday charmer: it has a lightness o f touch that tempts you to try a glass as a nightcap. It has a perfect golden colour, is fine and sweet with honeycomb flavours, a freshness and vibrance combined with a persistence and depth of flavour yet with amazing finesse. When I tried it, it wasn't perfect en the nose, just needed some swirling to open it up - but I loved the wine. It's available at cellar door, Dap Murphy's and probably elsewhere. Quaff on!
