Here’s a Champagne to get excited about showing an equal blend of Pinot Noir, Chardonnay and Pinot Meunier. This is approachable stuff without the expensive price tag. The Pinot adds fullness and intensity while Chardonnay imparts elegance and wonderful fruit freshness. Lifted and aromatic, this shows real finesse with aromas of yeast and baked biscuits. It’s fresh and zesty as well as being delicate on the finish. An excellent aperitif style that would work well with canapés.

Winemaker's Notes

Pale gold in colour with a fine mousse, the wine is aromatic on the nose. On the palate, it is well balanced and shows great finesse and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay from the finest soils of the Cote des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, mainly from the Marne Valley, gives the wine an appealing fruitiness and roundness.

Ayala's is an interesting approach, taking the boldness of pinot noir and whipping it into tighter shape with lower dosage than most, echoing one of the current trends among the champagne producers. This has ripeness and strong red fruit aromas, gentle spice and some savoury, toasty autolysis characters. The palate has round shape but is stretched along deeper lines with zesty acidity and a gently savoury dry finish. A good all-round style.
