Devaux descibes this top dog Champagne as a Baroque Opera - deep, complex and full of emotion. It is certainly an intense little puppy, and shows appealing, multi-layered scents of yellow citrus, honeysuckle, toasted bread and butteriness on the nose. The palate is rich and graceful with lots of lemon curd and nutty flavours, fine, frisky bubbles, and a relatively dry, creamy finish. It would be the bomb with poached shellfish.

Winemaker's Notes

Appearance: Attractive yellow appareance with hint of pale green. Rare bubbles with an elegant movement.

Nose: A good freshness with notes of honey, hot bread, almond then come creamy aromas, velvety floral notes with hint of citrus to reinforce the elegance.

Palate: Delicateness gives way to fullness. The mouth is amazingly fresh and extremely fine. The very long finish shows a good minerality without losing its lightness.

More exotic than the other Devaux champagnes, this starts out with an almost hoi sin sauce nose, some reserve wine aged in large wooden vats adding complexity and interest. Lemony citrus is here too, and some earthy nuances. The palate is smooth and composed with fine, toasty citrus and plenty of fine-laced acidity - nice balance and resolve.
