Here we have a cab sav from the King Valley that has some serious bottle age, and it's still kicking along quite nicely. Aromas of preserved cherries and dark berries swirl around the glass, together with a generous waft of vanillian oak. The palate is compact with rich, fleshy cherries, earthy savouriness, and a dry, mellow finish. Don't hang on to it, just drink it with a nice piece of steak.
The 2005 Chrismont Cabernet Sauvignon was carefully aged in quality, French oak and impresses the drinker with its deep, intense crimson colour. From a glass, its sumptuous berry fruit nose lifts, displaying blueberry, cherry and blackcurrant.
The palate introduces itself with a splash of flavours and fleshiness that builds in power and intensity through the mid-palate and beyond; well-balanced with a subtle finish of black cherries. Perfect to enjoy with red meat, including steak, lamb chops, kangaroo and game.
This wine may be enjoyed immediately, yet will reward another careful cellaring to 2014 and beyond.
