The two varieties were picked and fermented together in barrel or stainless steel tank, all the wine then matured for a period in oak. That oak is very obvious, the sweetness less overt but nonetheless there. Good cellar-door style.

Part barrel-fermented, part stainless steel-fermented, then given brief oak maturation; there is some green acidity that sharpens the herb and grass flavours of the palate, but the upside is unqualified freshness and suitability for seafood.
