Domaine de Chevilly Quincy
Quincy is an area right next to Sancerre in the Loire Valley, so that means we are looking at a savvy, folks! It's not what you would call complicated, in fact it's quite easy to understand. Smells of gooseberries, lemon curd and grassiness rise from the glass, whilst the palate is lighter-bodied and dry with tastes of citrus and stone fruits, fresh herbs, a lick of savouriness, and a dry, chalky finish. It's made for grilled white fish.
Softer acid levels haven't affected this wines crystalline structure, intensely aromatic and finely structured with a sandy/mineral finish. Flavours spread across white flesh fruits, cut grass and white florals.
