Making Pemberton proud is what Fonty’s pool does best. And they should be proud for turning out cool climate wines of this calibre. We love the crisp refreshment of this aromatic white blend, especially with something as simple as beer battered fish and chips. It’s lifted with citrus blossom and has an attractive herbaceous edge with powerful citrus flavours on the palate. It finishes crisp and clean with mouth-watering acids.

Winemaker's Notes

The Sauvignon Blanc and Semillon fruit was harvested without any interruption from inclement weather and without the pressure of disease. A range of picking dates over a 3 to 4 week period provided a spectrum of flavours with a variation in ripeness and acidity. The wine has elegance with a sense of weightlessness and is typically fresh, herbal, compact and racy.

Serving Suggestion: This fresh wine can be enjoyed as an aperitif. It is a great match with salads and chicken, but at its best with freshly shucked oysters or fish, particularly Whiting or Kingfish.
