Forester is only a newish name in Margaret River but already they've started with a flyer, a string of 96 point reviews easy evidence of that! This full flavoured Cab is a good example of what they do well, which is classic Margs styles, at a more than fair price.

Winemaker's Notes

Appearance: Medium red with red-purple hue.

Nose: Concentrated and complex with cassis, currant, mulberry and tobacco, with integrated quality French oak, dusty earth and cocoa. There is an underlying floral perfume along with violets and red berries.

Palate: A well structured palate that is long and dense with fine grain tannins. There are complex characters of cedary oak, cassis, tobacco and currants, with red berry, violets and delicate floral characters. The wine has a firm, long finish.

Food: Traditional roast lamb with rosemary.

Cellaring: Drinking well now but will develop further in the bottle through until 2024. The wine will benefit from decanting before drinking.

Alcohol: 14%

Winemaking: The fruit was harvested in the morning, delivered to the winery and was processed straight away on receival at the winery. Fermentation was strictly controlled at 22 – 24 degrees Celsius in our small open fermenters with heading down boards. Gentle extraction (a Forester Estate style was achieved by daily draining of the wine away from the skins and returning back over the top, with fermentation and maceration times varying from 7 to 30 days. The wine was then pressed to a blend of new and older French oak barriques to complete malo-lactic fermentation.

91/4/3/2% cabernet sauvignon, cabernet franc, merlot and petit verdot, hand-picked and open-fermented (with header boards), with maceration/ fermentation of batches between 7 and 30 days; matured for 22 months in new and used French oak. Very much in the pure, precisely detailed Forester cabernet style, marrying finesse with vibrant cassis fruit, cedar and powdery tannins.

“A blend of 92% cabernet sauvignon, 4% cabernet franc, and 2% each of petit verdot and malbec; open-fermented and macerated for between 7 and 30 days, then matured for 22 months in French oak (33% new). This is a very distinguished cabernet; while it is full of cassis fruit, it has the precision, bordering on rectitude, of high quality cabernet. Drink by 2031.”

Interesting wine; classic, slightly austere cabernet sauvignon in a Bordeaux mould; ripe tannins and good oak support; blackcurrant and cigar box flavours.
