This exciting white shows that Sauvignon needs not be a mono-dimensional nor an obvious flavoured beast. Thanks to spending time in oak to aid texture and complexity, this wine is a serious Savvy that exhibits smoke, herbs and flint in a style that is more Old World than new. It’s long and lean with mineral notes and would be the best thing you could pair with fresh oysters.

Oak Maturation: 46% of the wine spent 4 months in French Barriques. 32% in new oak and the balance 1 and 3 year old oak

Pale green/straw.
Aroma:
Clean with great balance between fruit and oak. There are pungent aromas of nettles, green capsicum, lychee and passion fruit, with underlying cedar oak, smoke, flint and wet slate. Palate:
Full and light, with a creamy-mineral texture. The palate shows great complexity with nettles, lanolin, cedar oak and smoke. A restrained sauvignon blanc with great complexity and balance.
Food Matches:
Goats cheese salad with asparagus, scallops with pea puree.
Peak Drinking: Drink now to 2018.

Hand-picked estate-grown Home Block grapes were cooled overnight; 43% cold-fermented in stainless steel using a yeast tailor-made for sauvignon blanc, the remainder fermented in used French barriques, 14% with wild yeast. Purity is the watchword for this wine, its green pea, grass and nettle flavours largely hiding an undertow of tropical notes, the package accelerating on the powerful finish.
