Winemaker's Notes

Appearance: Medium – deep red with purple hue.

Nose: This is an aromatic shiraz, loaded with exotic spice, fine white pepper, aniseed, white chocolate, raspberry and red berries. There are hints of violets and camphor with balanced toasty cedar oak.

Palate: Full and soft, with silky tannins and a textured palate. There are characters of pepper, plum, milk chocolate, aniseed and toasty oak with a soft, long finish.

Food: Traditional Australian BBQ or veal scallopini with sage.

Cellaring: A most attractive and approachable style to enjoy at a young age. Drink now.

Alcohol: 14%

Winemaking: Each parcel of fruit was gently crushed into small open fermenters with traditional heading down boards where fermentation was carried out under strictly controlled temperature conditions. Gentle extraction (a Forester Estate style) was achieved by daily draining of wine away from skins and returning back over the top. The wine was pressed to tank after 10 days on skins where 50% was sent to new and older french barriques to complete the primary and malo-lactic ferment.
