Francis Ford Coppola is probably better known for his epic movies like 'The Godfather' and 'Apocolypse Now', but this chardonnay is as rich as one of his film plots. Aromas of ripe stone fruits, citrus and toastiness adorn the nose, whilst the palate is medium-bodied, rich and creamy, with poached pear and citrus flavours, poised acidity, and a lush, toasty finish. It's a full monty, oaked style of chardy that would go with rich chicken or pork dishes.
In crafting the wine, we use a split fermentation technique where half of the fruit is
fermented in French oak, and the other half is fermented in stainless steel. Additionally,
we put the wine that was fermented in oak through malolactic fermentation in order to
achieve a creamy mouthfeel.
