Tyson Stelzer (2010 Vintage) says
Geoff Weaver has been a quiet trend setter in the Adelaide Hills for wild yeast, oak fermented sauvignon for seven years. With such texture, minerality and seamlessness, it's no wonder others are following.

In a world where concentration and power seems to be everything these wines have, an elegance like Sauvignon St Bris thanks to oak building a wine with coconut and vanilla and lovely green melon/boiled sweet-like complexity.

James Halliday (2009 Vintage) says
This is 'the other' Weaver sauvignon blanc, wild-fermented in French oak barriques and given 12 months' lees contact. No acid was added, nor was the wine fined. A striking contrast to all other Australian sauvignon blancs, that delivers great complexity and equally great intensity. It also has greater longevity than other sauvignon blancs.

Jeremy Oliver (2009 Vintage) says
Rather wild, oxidative and handsomely oaked, this complex, reserved and savoury sauvignon Wane slowly unfolds intense flavours of gooseberries and lychees, but does finish with some oaky edginess. It's evolved and very secondary, with a very restrained presence of primary fruit, extending with some length and chalkiness, finishing slightly angular, with lemony acids. Very adventurous winemaking!

A very interesting wine; barrel-fermented in French oak, and spending 12 months on yeast lees, it has absorbed the oak yet retains the elegance of the GeoffWeaver style; no added acidity, but still has a long, firm, fresh finish.
